Mini Turkey Meatloaf
This super easy Mini Turkey Meatloaf recipe tastes great and is perfect for lunch, dinner and meal prepping. The ingredients are also all 21 Day Fix compliant.
Every week when I pick up the groceries, I always get a package of ground turkey and/or ground beef. Sometimes we will cook up the meat for taco night or toss it in a casserole. MANY weeks I make these mini meatloaves. I love how easy they are to make and how versatile the taste can be. You can change the taste from Italian to BBQ simply by swapping out different seasonings and herbs.
Using turkey instead of beef will help lighten the meal up a little, but feel free to go with your own taste preference.
The entire family scarfs down these mini meatloaves every time I make them. Many times we enjoy them with quinoa and broccoli on the side for a flavor-filled meal. Other times we serve pasta on the side. Like I said above, they are really easy to customize!
Mini Turkey Meatloaf Ingredients
If you are following 21 Day Fix, this recipe uses all Fix-approved foods and can be counted as: 1 red (for 2 mini meatloaves).
You will need:
- 1 lb lean ground turkey (or chicken or beef)
- 1 small yellow onion (chopped)
- 1 green pepper (chopped)
- 1/2 cup tomato sauce (sugar free if possible)
- 1/2 cup rolled oats
- 1 egg
- Salt, pepper, garlic powder, to taste
- Non-stick cooking spray
How to make Mini Turkey Meatloaf
Preheat oven to 350 F.
Mix all ingredients in a bowl. Save a little tomato sauce to top the loaves.
Spray a muffin tin with non-stick spray and fill 8-10 cups with turkey mixture.
Top each cup with remaining bit of tomato sauce.
Bake for 30 minutes at 350 F.

I don’t have any tomato sauce! How do we feel about sugar free ketchup instead and would it still be 21 Day Fix compliant? (I’m new to this) Thanks!
