I am on a ROLL!
Not only have we been cramming our freezer full of home cooked meals that can be pulled out and cooked on the busiest of nights, but we’ve been working on making healthier versions of some of our favorite recipes.
I LOVE making eggs for breakfast sandwiches in big batches and freezing them for later. I vary the recipes that I make – sometimes they are veggie-versions and other times I use breakfast meats.
This morning I whipped up a new batch of eggs and for the first time I tried Jimmy Dean Turkey Sausage Crumbles for the meat while substituting Egg Beaters for eggs. This cut the amount of fat down substantially!
Makes: 10 servings
You will need:
- Jimmy Dean Turkey Sausage Crumbles (1 bag)
- 2.5 Cups Egg Beaters Liquid Eggs (or 10 large eggs)
- 1/2 Cup feta cheese crumbles
- 1/2 Cup nonfat milk
- Dash of ground pepper
How to make:
Preheat oven to 350 F.
Combine all ingredients in a bowl.
Place ingredients in a greased rectangular baking dish and bake for 40 minutes (or until the eggs are entirely cooked).
Remove from oven and allow to cool thoroughly.
Cut into 10 equal squares.
Place each square in a sandwich bag and freeze.
To make your breakfast sandwich:
Remove frozen egg square from the bag.
Wrap in a paper towel and microwave.
Cook for 1 minute and allow to sit for 30 seconds.
Cook for an additional 1 minute.
Serve on your choice of muffins, bread, roll, etc!
